EASY MICROWAVE CORNBREAD

While I’m trying to get things organized on my website, I want to share with you a very easy recipe for cornbread.  It’s actually “baked” in the microwave.  I had this box of “Jiffy corn muffin mix” on hand and was hungry for cornbread but my oven was out of commission at the time.  So, I did some research into the possibility of using my microwave.  I found a recipe for microwave cornbread at this website, https://site.jiffymix.com/images/pdfs/JIFFY_Mix-Microwave_Recipes.pdf and decided to give it a try.  Since I had bought 2 boxes of “Jiffy corn muffin mix” for $1.00, I figured if it flopped, I would not be out much.  A low investment for an experiment!  I love experimenting!  Plus, I had another box for a backup if the first try failed.

Here’s the recipe.  I did tweak it a little bit from the original because the following worked the best for me:

Easy Microwave Cornbread

Ingredients:

1 box of “Jiffy corn muffin mix”

1 egg

1/3 cup + 2 TBSP. milk

Grease an 8 x 8-inch square or 7 x 9-inch rectangle microwave safe dish. Mix all ingredients together in a bowl using a spoon until well blended.  Pour into greased dish (I used cooking spray).

Microwave 8 minutes on 50% power.  NOTE:  I cooked it exactly like this and it turned out delicious, as well as moist.  However, it doesn’t get brown on top but that didn’t bother me. My microwave is 900 watts.  Cooking times may vary with different wattages.  I would check it after 4 minutes, then continue cooking time as long as needed to get done.  Inserting a toothpick to see if it comes out dry is my favorite test for doneness.  The original recipe also said to use a round dish.  I tried this and it didn’t cook around the edges very well; so, I had to cook the cornbread longer and the texture was dry.  Therefore, I prefer to use a square or rectangle microwave safe dish.  Additionally, the original recipe said to rotate the dish every 2 minutes if you don’t have a turntable in your microwave. Mine has a turntable.

You can make great tasting cornbread in the matter of minutes and at a very low cost.  I love saving money and time!  Try it and let me know what you think.
