Pineapple Upside Down Dump Cake

Since my oven is out of commission, I have been experimenting with baking in the microwave. This recipe came out delicious so I want to share it with you. Plus, it was super easy! An additional fact is that using the microwave to bake saves on the A/C bill because you don’t heat up the house with the oven. I found this recipe at the following link: Easy Dump Cakes. They are called dump cakes, but I’m not sure why. Any way, you will enjoy this one if you savor Pineapple Upside Down Cake!
The recipe is as follows:
Ingredients:
1 regular size yellow cake mix (I used Duncan Hines brand.)
3 eggs
1 small can crushed pineapple, in its own juice
1 can of pineapple rings
1 small jar of maraschino cherries
¼ to ½ cup brown sugar

Mix together cake mix, eggs, and crushed pineapple. Set aside. In the bottom of a microwave safe dish, place the brown sugar then arrange the pineapple rings. Put a cherry inside the rings and some outside the rings. Now you’re ready to pour the batter over the top of the pineapple rings. Place in the microwave and cook on high for 15 minutes. Easy peasy and scrumptious!!
Tips:

  1. Be sure your microwave dish has enough depth to handle the cake when it raises during the cooking process.
  2. I prefer a rectangular or square dish, instead of a round shape. I find the batter cooks more evenly.
  3. Some microwave cake recipes say to cover the dish while cooking but I don’t because a cover interferes with the rising process.
  4. Insert a toothpick to test for doneness, but note that the toothpick may not go all the way to the bottom. This happened to me. The toothpick came out clean but the bottom of the cake was still raw because it had raised too high for the toothpick to reach the bottom.
This is what the cake looks like when it is still in the dish. I used a 7 in. x 9 in. glass microwave dish.
