WHAT IS RISOTTO?

I have always been intimidated by any recipe that had the name “risotto” in it.  For one thing, I had no idea what risotto was and plus, it just sounded complicated.  I thought risotto was actually another name for orzo.  To my default, I used the words interchangeably until I was recently set straight. One day, I was at my local library looking for some movies to rent, when I happened upon a couple of cooking DVD’s by the Italian chef, Giada De Laurentiis.  Since I want to go to Italy someday, I thought why not get started on some authentic Italian recipes.  After watching these DVD’s, I finally learned the answer to: “What is risotto?”  Risotto is an Italian dish made from arborio rice, which is an Italian rice.

I highly recommend Giada De Laurentiis’s cooking DVD’s.  Giada is not only a joy to watch, but also an excellent Italian chef who explains her cooking processes and why she does what she does.  The DVD’s I found at my library were called, “Everyday Italian.” Easy to follow instructions make the DVD’s both entertaining and informative.  I learned a great deal about risotto and now, what I thought was a complicated dish, has turned into my favorite recipe to cook! Even though it is a tad labor intensive, the outcome is well worth it!
